ST. GEORGE — Another week means another episode of “What’s on the Menu,” so host Sheldon Demke headed back to Bloomington Country Club to grab some good eats with coworker Vin Cappiello.
Bloomington County Club is serving up savory dishes that accent red rock-surrounded golf course views. Along with a full bar, their reimagined menu provides a casual yet elegant dining experience sure to satisfy even the most particular guest’s palette. Come for the golf, and stay for the food.

Demke and Cappiello started with the short pork ribs, a Chef Freddy special. Like all good ribs, Bloomington Country Club’s are glazed with BBQ sauce and so tender that you won’t even need a knife.
“The pork ribs here are just out of this world,” Demke said. “They just fall right off the bone.”
They also tried an Italian classic, the chicken marsala. Fresh chicken in a creamy and savory Marsala sauce paired with seasonal vegetables. Both enjoyed the tenderness of the chicken as well as their next dish, the pan-seared herb-seasoned halibut.
“It just creates a nice flavor in your mouth,” Cappiello said. “You chew it, you swallow it, you think, ‘I think I’ll wash it down with a nice cold one.’ That’s the way halibut should be cooked.”
The restaurant at Bloomington County Club is open for breakfast, lunch and dinner. Reservations are highly recommended for dinner.
